Homemade No Bake Nut Butter Cups

We love no bake desserts with few, simple ingredients.


Ingredients

  • 1/2 cup almond butter, peanut butter or allergy-friendly sub

  • 4 tbsp coconut oil, divided

  • 1 tsp vanilla extract

  • 1 1/2 tbsp sweetener of choice. I like agave or maple syrup

  • 3 oz melted chocolate

Instructions

  • Line a mini muffin tray, or a plastic container. I prefer silicone molds, easy peasy.

    If not easily stir-able, gently heat the nut butter and oil. Stir first four ingredients, using 2 tbsp of coconut oil- until smooth, then portion into the container. Stir together remaining ingredients and freeze to set.
