Looking for a no cook, meal? Perfect for hot summer days or don't wanna cook times.
I ate this for breakfast. Well, it was more like brunch time -ish. This protein and fiber focused meal can work for any meal of the day. The guac brings the healthy fats.
Protein, Fiber & Fat focused meals keep blood sugar levels more stable than Non-Fibrous Carbs. When we eat (too many) high glycemic carbs like rice, potatoes, oatmeal or even high sugar fruits, blood sugar levels go for a roller coaster ride and that can bring about several, various options for chaos to occur within that impact your overall health.
Original Post: For breakfast (could also be a lunch since food is food), I made Guac and put it on a bed of cabbage for more fiber. I added cottage cheese rather than eggs. I already had enough healthy fats in the guac and the cottage cheese offered higher protein and lower fat option. Plus- no cook? I'm in!
Sprinkle on some salt and garlic powder. It's delicious.
